Baking something for Easter

So – we were planning an evening of binge-watching Netflix and this gave me an ideal opportunity to try something that had a lot of rest time in the recipe.

I tried for Paska buns; these were a huge success, and if you cannot finish them when they are fresh; put them in the microwave for about 20 seconds to have them good as new.

The recipe for the Paska buns is based on the recipe from Mennonite Girls Can Cook, and the frosting on The Busy Baker.

Paska Buns

1.5 cups milk

0.5 cups butter

1 small lemon, zest & Juice

1 orange, zest & Juice

4 eggs, well beaten

1 teaspoon salt

1 cup of sugar

3 tablespoons instant yeast

7 to 7.5 cups all-purpose flour

In medium sized microwave bowl; heat milk & cubed butter for about 2 min. Stir to melt butter.

Grate rind of lemon and orange; Juice each (be sure to remove the pips).

Combine milk, butter, juice, and grated rind and stir well.

Add the beaten eggs, sugar and salt. Mix well.

In your mixer with a dough hook; combine 4 cups of flour with instant yeast. Gradually add all the liquids, mix till smooth. Add flour one cup at a time till the dough is no longer sticky, but still soft.

Hand knead for a couple of minutes adding flour if needed.

Let it rise in a warm spot till double in size (cover your bowl with saran wrap, and then insulate with a towel or baby blanket)

Form small balls and place on lined pans. (I split mine into 24 buns, but 36 would have been more in line with snack size.)

Allow buns to rise until double in size (about 90 minutes).

Bake at 325 F for 15 to 20 minutes, till golden brown. Cool before you put on the frosting.

And yes – these just beg for sprinkles of some sort.

Frosting

8 ounces of cream cheese at room temperature

0.5 cup butter at room temperature

2 cups icing sugar

A few drops of milk, if needed to get a spreadable consistency.

In Medium bowl, cream together butter and cream cheese. Gradually add the icing sugar. Mix till well blended. If needed add a few drops of milk to make the frosting softer.

Spread on cooled buns and enjoy.
