I have been travelling often in the last couple of months; and while I enjoy seeing new places and meeting new people, this does makes me crave homemade food.
Was very happy to try a recipe that I ran across on the side of Milled Flax bag that was in my list of items needed for my smoothie.
I made some adjustment to it; and ended up with the following:
1 egg (beaten with your fork)
2 tbsp. Milk (mix into the egg)
¼ cup milled flax seed
1 tsp. brown sugar
1 tsp. baking powder
¼ tsp. ground cinnamon (mix all of the dry ingredients into the egg mixture)
1 tbsp. dried berries (sired into to mixture after is has been well mixed) – optional
The original recipe called for placing this into your mug to microwave; but as my mug is keeping my tea company, I went with a 1 cup glass bowl.
Microwave on high for 2 minutes
Cool for a minute before you eat. (Best to eat while warm.)
(Pumpkin Pie Spice is a nice variation on the cinnamon)
